How is food made differently for foreigners and locals? Spice
is the most important difference. Whenever food is made with
spice in Xizhou, you will be asked how much spice you want.
After working in the business for a while, some people are able
to gauge the spice level by looking at the customer. Foreignforeigners want little to no spice, whereas the Sichuanese
customers enjoy lots of spice in their foods.

In many countries when you go to a local restaurant, there is
the possibility that as a foreigner, you will be charged more
than a local person for the same product. From what I have
seen, this is not the case in Xizhou. This is because all the
prices are on the menus and the foreigners and the locals share
the same menus. It is also just because the people of Xizhou
who I have talked to have said that they should not treat visitors
to the village any different from a local.
