" At the festivals and fairs, a lot of people ask for it," said Leo.
Other drinks Taqueria Emmanuel offers include Mexican coke in a glass bottle, the ever-popular Jaritos soft drinks, and Coke and Pepsi products.
Ixcoy came to the U. S. many years ago to seek out opportunity, as there was little of it in Guatemala.
And true to the entrepreneurial ethic, he and his wife Angelica have put the work in to develop their business.
They started with a grocery store in Monticello, Ky., and set up tables and offered Guatemalan and Mexican food in front of the store.
But being outside, the wind sometimes would blow out the flame on the small gas-powered grill.
The Ixcoys overcame this problem by moving the equipment into a food trailer, and so was the Taqueria Emmanuel Food Truck born.
Through perseverance and prayer, the Ixcoys grew their family business by offering high-quality fare with original flavors inspired by Mama. The business has gained so
much popularity that Ixcoy had to expand by buying two more food trailers, for a total of three.
He is also looking to the future, with the possibility of additional food trucks, and maybe even a store front eventually.
And as far as the prayer part goes, Leo is not shy about it. " We are Christians," he said. In fact, the family ' s faith is reflected in the name of their business: the Emmanuel in the name means " God Is With Us."
Leo said he wants to give a message to his customers. " Against all the problems, there is only one solution: God."
Leo considers Taqueria Emmanuel a family business, and is teaching his children the trade, along with Mama ' s original, authentic recipes. Leo, Angelica, and their children, Johnathan, 14, Brian, 12, and Melanie, 9, all attend Monte De Los Olivos Church.
