Rolling in Flavor : A guide to our local food truck favorites

Somerset and Pulaski County have for a good while now had an abundance of quality dine-in options from which to choose your next meal , and now , folks can claim even more eatery options in the form of a thriving population of food trucks .
Several have been around for a while , and some are new to the scene . A virtual dining cornucopia of fine , fast and convenient food variety has popped up over the last several years with the food trucks , which can be found at many local events and at many a convenient spot across the city and county throughout the year .
Bob ' s Grab & Go
Shannon Barron , proprietor of Bob ' s Grab & Go , packs her food with plenty of carefully-crafted flavor and isn ' t stingy with the portions either .
A crowd-pleasing option for many locals over the last couple years or so , and growing in popularity , is Bob ’ s Grab & Go , a food truck that offers a variety of tasty options , and reports have it they don ’ t hold back on portions either .
Known for its big variety of tasty dishes , and especially its mouth-watering burgers , Bob ’ s Grab & Go makes them special .
It ’ s not just the average beef in a bun fare with these burgers , and a good example of that is the Double
Cheddar Western Burger .
This monster sandwich , which the chef calls her “ burger with a bite ,” is crammed full of flavor with two types of cheddar , crispy jalapeno , onion and dynamite original , homemade BBQ sauce .
In fact , all of Bob ’ s Grab & Go sauces are personally hand-crafted .
Other crowd favorites on the menu include : Pulled Pork Nachos , with homemade chips , dreamy nacho cheese , hand-crafted smoked BBQ , topped-off with homemade coleslaw and original BBQ sauce ; Crack Chicken Nachos with ranch-based seasoning , seasoned shredded chicken , nacho cheese , shredded cheddar , bacon , diced tomatoes , green onions , sour cream , topped with a generous dose of ranch ; and Bob ’ s Grab & Go signature Loaded Fries , with your own choice of topping to choose from , such as Bacon-Ranch-Cheese , Chili Cheese , or get all the Pulled Pork Nacho toppings mentioned above on your fries . Every food truck , like every business , has a story behind it , and behind its name . “ People will come up and ask ‘ Where ’ s Bob ?’” joked Shannon , “ I always tell them ‘ I ’ m Bob !’”
Shannon doesn ’ t look like your average Bob , so why “ Bob ’ s ” Grab & Go ?
Well , Shannon is , according to the late Bob Barron of Eubank , one fine cook . Bob , who was Shannon ’ s fatherin-law , passed away a few years ago , and is remembered by many as a pillar of the northern Pulaski community ,
