APPLE J U I C E S Apple juice is a fruit juice made by the mac- eration and pressing of an apple. The re- sulting expelled juice may be further treated by enzymatic and cen- trifugal clarification to remove the starch and pectin, which holds fine particulate in sus- pension, and then pas- teurized for packaging in glass, metal or asep- tic processing system containers, or further treated by dehydration processes to a concentrate. 24
