Grilled Chicken with Quinoa Tabbouleh

For the Grilled Chicken
Ingredients
- 4 boneless , skinless chicken breasts - 2 tablespoons olive oil - 2 cloves garlic , minced - Juice of 1 lemon - 1 teaspoon dried oregano - Salt and pepper to taste
For the Quinoa Tabbouleh :
- 1 cup quinoa , rinsed - 2 cups water - 1 cup chopped fresh parsley - 1 / 2 cup chopped fresh mint - 1 / 2 cup diced cucumber - 1 / 2 cup diced tomatoes - 1 / 4 cup diced red onion - 1 / 4 cup olive oil - Juice of 2 lemons - Salt and pepper to taste
