Pastry
Lemon Filling:
Meringue Top:
2 cups Plain Flour
Pinch Salt
1 Tablespoon Icing Sugar
185g (6oz) Butter
1 Tablespoon Lemon Juice
1 - 2 Tablespoons Water
4 tablespoons Plain Flour
4 Tablespoons Cornflour
2 Teaspoons Grated Lemon Rind
3/4 Cup Lemon Juice
1 Cup Sugar
1 1/4 Cups Water
90g (3 oz) Butter
4 Egg Yolks
4 Egg Whites
Method:
Sift, flour. Salt and icing sugar into a
bowl. Chop butter roughly and add
to dry ingredients. Rub in until
mixture resembles dry bread
crumbs (this step can be done in a
food processor) but the next needs
to be done in a bowl). Add lemon
juice and enough water to mix to a
form dough. Refrigerate 30 minutes.
Roll the pastry on a lightly floured
surface to fit a 23cm (9inch) pie
plate (or cut to size for individual pie
moulds). Prick the base and sides
with a fork. Bake in a moderately
hot oven (220-230 electric/ 190 gas)
10 - 15 minutes (until lightly
browned) Allow to cool in pie dish/
moulds.
Method:
Combine sifted flours, lemon rind,
lemon juice and sugar in a saucepan.
Add water and blend until smooth, stir
over heat until mixture boils and
thickens: the mixture MUST boil.
Reduce heat and stir for a further 2
minutes. Remove from heat, stir in the
butter and lightly beaten egg yolks,
stir until butter has melted.

3/4 Cup Caster Sugar
Method:
Combine egg whites, water and salt in
a small bowl and beat on high speed
until soft peaks form. Gradually add
sugar, beat well until sugar has
dissolved. Spoon on top of lemon
filling spreading meringue to edges of
pie. Peak meringue decoratively with
a knife.
Bake in a moderately hot oven (220230 electric/190 gas)
For 5 to 10 minutes or until lightly
browned.
Cool then refrigerate.
When cool, fill pastry cases and
smooth lemon filling with a knife.
