Diabetic Living Makes: 4 servings at $2.29 each ($9.16 total) 1 tsp. snipped fresh sage or 1/2 tsp. dried sage, crushed 1/4 tsp. salt 1/4 tsp. coarsely ground black pepper 1 pork tenderloin (about 1 lb.) 1 Tbsp. canola oil 1 med. red onion, cut into thin wedges 3 med. (1 lb.) cooking apples (such as Granny Smith or Jonathan), cored and cut into 1/2-inch-thick wedges 2/3 cup apple juice or apple cider Fresh sage sprigs (optional) 1. In a small bowl, combine the snipped sage, salt and pepper; rub on all sides of tenderloin. In a large skillet, brown tenderloin in hot oil over medium heat, turning to brown all sides. 2. Transfer pork to a shallow roasting pan. Add onion to pan around pork. Roast, uncovered, at 425 degrees, for 10 minutes. Stir in apples; roast for 10 to 15 minutes more or until internal temperature of pork registers 155 degrees on instant-read thermometer and juices run clear. 3. Transfer pork and apple mixture to serving platter; cover with foil. Let stand for 10 minutes before slicing (temperature of the meat will rise 5 degrees while it stands.) 4. In a small saucepan, bring apple juice to a boil; simmer gently, uncovered, for 8 to 10 minutes or until reduced to 1/4 to 1/3 cup. Drizzle over meat and apple mixture. Interfaith Housing Services is excited to announce the hiring of our new CASH Program Coordinator, Shellie Couch. Mrs. Couch will be responsible for collaborating and coordinating the CASH program for the central region of Kansas, while also working on special projects throughout the organization. Shellie is also very experienced in social media. “I’m excited to join the Interfaith team,” says Couch. “It is exciting to be a part of an organization that provides so many great programs to communities throughout Kansas. I am especially excited about being a part of the CASH program because not only does it help the community and its members, but encourages a new way of thinking about things.” Shellie is a wife to Coil Couch and has three grown children and two grandchildren.
