With summer approaching, there are many more days to enjoy the outdoors, which means it’ s also a good time to take cooking outside. If your outdoor activity of choice is fishing, you can incorporate that with a nice meal with your catch of the day.

Fish is tricky to grill – grates are not your friend on this one. Many people use the foil method, which allows for a slow steam cooking, good for adding butter and seasonings without them leaving the fish.
But we found a recipe by Trina Cosgrave on the Allrecipes. com blog.“ Whole trout stuffed with herbs and flavorings, then grilled directly on grates, produces flavorful, flaky, tender fish with tasty crispy skin,” she said of her recipe.
We’ ve added a refreshing cocktail to go with your fresh fish meal.
Ingredients:
• 2 whole trout, cleaned
• 1 tablespoon olive oil, divided
• 1 pinch coarse sea salt to taste
• 1 pinch ground black pepper
• 1 / 2 lemon, thinly sliced
• 1 / 2 sweet onion, thinly sliced
• 1 clove garlic, minced
• 2 sprigs fresh rosemary
• 2 sprigs fresh thyme Directions: 1. Preheat an outdoor grill for high heat and lightly oil the grate.
2. Rub each trout generously with olive oil and sprinkle with sea salt; sprinkle inside of cavities with salt and black pepper. Place half the lemon and onion slices into cavity of each trout, along with minced garlic, and place a sprig of rosemary and thyme into cavities.
3. Turn preheated grill down to low and place the trout directly onto the grill; cook until flesh flakes easily and the skins are browned, 6 to 7 minutes per side, flipping once. Ingredients:
• 3 blackberries
• 1 lime wedge
• 1 cup ice
• 1 1 / 2 ounces tequila
• 3 / 4 ounce fresh lime juice
• 3 / 4 ounce Simple Syrup
• 1 / 2 ounce Chambord
