Lil ’ Pumpkin Bites
1 box of Spice or pumpkin cake mix 1 can of pumpkin ½ cup water 1 tsp vanilla extract ½ tsp cinnamon cream cheese frosting ( optional )
Directions
1 . Preheat oven to 350 degrees . 2 . Spray mini muffin tin with nonstick cooking spray or mini cupcake liners . 3 . Mix cake mix , pumpkin , water , vanilla , and cinnamon in a large bowl with a hand mixer until smooth .
4 . Fill each cupcake liner ¾ full with batter . Bake for 15-18 minutes or until toothpick inserted into the center of the cakes comes out clean . Remove the cupcakes from the tin and cool .
5 . Drizzle with cream cheese frosting . For an easy drizzle , place frosting in a zip top bag and cut a small hole with scissors on the corner of the bag . Squeeze bag gently and drizzle frosting on top of pumpkin bites .
