Pumpkin Chili

Pumpkin Chili
1 Tbsp olive oil 2 tsp minced garlic 1 / 2 cup green bell pepper , diced 1 / 2 cup red bell pepper , diced 1 / 2 cup white onion , diced 1 lb lean ground turkey two 14 oz can diced tomatoes and green chiles
1 cup 100 % canned pumpkin 1 cup low sodium chicken broth 1 can black beans drained 1 Tbsp chili powder 2 tsp cumin 1 bay leaf 1 tsp pepper 1 / 4 tsp salt
Directions
1 . Heat olive oil in large stockpot over medium high heat . Add garlic , peppers , and onion . Sauté until softened , stirring frequently , approximately 2-3 minutes .
2 . Add turkey to the stockpot and cook until browned .
Approximately 5-6 minutes . 3 . Add the remaining ingredients to the pot , stir , and cover . 4 . Simmer for 20-30 minutes .
