Sommelier Martín Bruno , a former national champion , guides me down the stairs into the low-lit temple to wine for a terroir-driven tasting of Malbec , Argentina ’ s world-class red , which is an ideal match for meat . He invites me to touch silk with my hands then appreciate that same texture in the mouthfeel . It ’ s an artful masterclass , buoyed by the presence of vintages from wineries such as Bodega Norton and Bodega Catena Zapata .

Unwilling to settle on what already appears perfect , Pablo and his team continue pushing forward , investigating different cooking techniques , and strengthening meat traceability . Besides sourcing the finest grass-fed beef , there are dozens of other details : potatoes are deep fried three times , vegetable sides are seasonal , wine is served in the finest glassware you can imagine and the delicious dulce de leche flavored ice cream is prepared with Jersey milk .
“ The parrilla is part of Argentine culture — it ’ s in our blood ”, says Pablo . And it ’ s certainly now in mine .
