ODDERO CONVENTO LANGHE ROSSO DOC 2021 A blend of Dolcetto and Barbera with a touch of Nebbiolo for structure , this wine comes from vineyards around the cellar at Santa Maria . These varietals are naturally fermented in stainless steel before maturing for 6 months in cement ( with the Nebbiolo component in cask ) with spontaneous malo . They ’ re then assembled in the late spring after harvest for bottling . This particular wine is light and crunchy with elegant notes of violet and berry fruit that speak to its Dolcetto dominance .
