P a g e 2 5 P A U 3 A ! Recipes, goodies, and games Cooking with Diana Ever since I became a PCV in 2000, cooking has been an important part of my leisure activity. I seem to use cooking both as a way to relax and as a reward. And, because I am a “health nut,” I’ve adapted many of the recipes in traditional cookbooks so that I feel less guilt about snacking on a regular basis. Here are a few of my favorite adaptations: “Healthy” Chocolate Chip Cookies less than ½ cup sugar (depends on how sweet you like your cookies) ¼ cup brown sugar (if available): can be purchased in Skopje ¼ cup olive oil (or any vegetable oil) 1 teaspoon vanilla or vanilla sugar 1 egg 1 cup flour (I usually use ½ cup white flour and ½ whole wheat flour) ½ teaspoon baking soda ¼ teaspoon salt ½ to ¼ cup chocolate chips or broken up dark chocolate bars Heat oven to 200 C. Mix sugars, oil, vanilla and egg in large bowl. Stir in flour, baking soda and salt. Stir in chocolate. Drop dough by rounded teaspoonfuls on ungreased cookie sheet. Bake for 10-15 minutes (depending on your oven) until golden brown. Granola Bars (Good for breakfast too) ¼ cup sugar ¼-1/2 cup honey (depends again on how sweet you like things) 1-2 tablespoons of peanut butter or olive/vegetable oil 1 egg 1 tablespoon milk 1 teaspoon vanilla 1 cup whole whea
