1 1/2 tbsp of Extra Virgin Olive Oil (EVOO) 1 3/4 tsp of Kosher Salt
1 3/4 cup of All Purpose Flour
Add olive oil and salt into the sponge. now add 1 3/4 cup of flour. Turn your stand mixer at LOW speed, using a dough hook attachment, until dough is soft and slightly sticky. If the dough sticks on the sides of the bowl, add 1/4 cup flour little at a time.
Pita Bread (Just the Basics)
.25 oz (2 1/4 teaspoon) package Active Dry Yeast 8 oz (1 cup) Warm Water (95 to 110 degrees F.)
1 cup of All Purpose Flour
Add the yeast into a mixer bowl and add 1 cup of warm water and 1 cup of flour. Whisk them together and let it stand for 20 minutes for the mixture to rise and make a loose sponge. The mixture will bubble and foam.
Knead dough with the stand mixture on LOW speed until slightly springy and still soft. This should take about 5 to 6 minutes. Take out dough onto a floured work surface and form into a ball.
