Prawn Stir Fry by Alexandra Jackson
Alexandra submitted a whole weekly meal plan , of which the Prawn Stir Fry was one of the many recipes she was able to share . Well done Alexandra !
Ingredients Method
15 prawns ( peeled , deveined and de-tailed )
½ bunch of coriander 3 gloves garlic , finely diced ½ brown onion , finely chopped 1 knob ginger , finely grated ½ carrot , chopped ½ red capsicum , chopped
1 head of broccoli , chopped into small florets
100 grams green beans 100 grams baby corn 1 tbs . fish sauce 1 tbs . coconut oil 1 lime , cut

Coat a wok with half the coconut oil . Cook the carrot , capsicum , broccoli , beans and baby corn , until the broccoli turns a bright green and then remove and put to one side Coat the wok with a bit more coconut oil and then sauté the onion until soft and translucent , then add the garlic and ginger . Cook for a minute or two and then add the cooked vegetables back into the wok . Toss through and then remove and put to one side Coat the wok with the rest of the coconut oil and then fry off the prawns , until they are just short of cooked Squeeze the lime over the prawns and add the fish sauce , then add the cooked vegetables back to the wok . Stir through and sprinkle over coriander .
