Pizza

Healthy Mediterranean Pizza

Ingredients Method
Pizza base 1 cauliflower 1 egg ⅓ cup mozzarella cheese
1 tsp. of mixed herbs / oregano
Hummus
Store-bought or homemade by blending 1 can of chickpeas, 2 tsp. of tahini, 2 tsp. of lemon juice, salt and pepper, and smoked paprika to taste
Mediterranean lamb Lamb or chicken strips 1 tsp. Oregano 1 tsp. olive oil Salt and pepper Juice from one lemon 1 clove of garlic( or more) Homemade tzatziki ½ cucumber Salt and pepper Lemon juice to taste ½ cup plain or Greek yoghurt ¼ tsp. of minced garlic( or more) Topping ½ red onion 100 g Kalamata olives ½ red capsicum

Rice the cauliflower in a food processor then steam the rice in microwave for 7 minutes. Then, place cauliflower in a cheesecloth or hand towel and squeeze out excess liquid. Make sure all liquid is squeezed out! Mix ingredients together and place dough on a baking sheet in the oven and bake at 180 degrees for 15-20 minutes or until dough is cooked and golden. It needs to be thin. In the meantime, mix up the ingredients for the lamb and cook in a pan until strips are cooked through. Once cooked, place hummus on the base and then top with lamb strips, chopped red onion, chopped Kalamata olives and diced red capsicum. Top with generous spoonful of homemade tzatziki.
