Grain-Free, Low Carb Cauliflower Pizza Crust

Ingredients Method
Non-stick spray
2½ cups cauliflower, grated( about ½ a large head)
1 large egg, lightly beaten
1¼ cups shredded part-skim mozzarella cheese
2 tbsp. grated parmesan cheese
Kosher salt and freshly ground black pepper
¼ cup tomato sauce
1 cup grape tomatoes, sliced in half
2 cloves garlic, sliced ¼ tsp. crushed red pepper flakes Fresh basil leaves, optional

Line a rimmed baking sheet with parchment paper, and preheat oven to 215 degrees. Grate the cauliflower using a box grater until you have two cups of cauliflower crumbles. Place it in a large bowl and microwave for 7-8 minutes or until soft. Remove from the microwave and let cool. Mix in the egg, 1 cup of mozzarella, parmesan cheese, salt and pepper. Once combined, pat into a 25cm round on prepared pizza pan. Spray lightly with non-stick spray and bake for 10- 15 minutes, or until golden. Top the pizza with the sauce, ¼ cup mozzarella, grape tomatoes, garlic, and red pepper flakes. Bake in the oven until melted and bubbly for another 10 minutes. Top with basil before serving.

Cauliflower Crust Pizza

Ingredients
⅓ head cauliflower( enough to make 2 cups of cauliflower rice, one medium head will usually yield about 6 cups of rice)
1 egg ½ cup parmesan cheese ¼ cup mozzarella ¼ tsp. salt ⅛ tsp. pepper 1 tsp. garlic
Method
1 Blend up cauliflower florets in a processor. 2 Steam cauliflower by placing in a microwave in a bowl( you don’ t need to add water or cover) and heat 7 to 8 minutes, stirring once. Allow to cool. 3 Preheat oven to 200 degrees. 4 Place 2 cups of cauliflower rice in the centre of a piece of cheesecloth or old dish towel( make sure you use one you don’ t care about as it will likely stretch out).
5 Create a ball with the rice inside of the cloth and ring out the water. Do not skip this step because it can make or break your crust! You need to remove as much moisture as possible, so continue squeezing until water stops coming out of cloth. 6 Transfer to a bowl and mix with all other ingredients. 7 Spread out dough on pizza pan, lined with baking paper and sprayed. 8 Bake for 9 to 12 minutes until firm and cooked through. 9 Remove from oven and add desired toppings. 10 Return to oven for another 5-7 minutes until cheese is melted.
