Seared Salmon Served with a Delicious Tomato Chilli Salsa

Ingredients Method
2 x pieces of salmon( with or without skin), seasoned with salt and pepper and drizzled with olive oil
Salsa 2 x tomatoes, diced
1 x medium Lebanese cucumber, diced
½ x red onion, diced 1 clove of garlic, minced
1 x medium red chilli, seeded and diced
½ x red capsicum, diced Fresh dill to taste Juice of one lemon ¼ cup extra virgin olive oil Salt and pepper to taste

Season the salmon with salt and pepper( you can leave it unseasoned if you prefer) and rub with a little olive oil to coat and set aside. Dice all of the salsa ingredients and combine in a bowl with the garlic, dill, lemon juice, olive oil and season with salt and pepper. Mix thoroughly and place in the fridge. Heat a non-stick frying pan until quite hot and sear the salmon turning only once placing the skin side down first. Cook to your liking, I prefer medium well so I cook it for around 4 to 5 minutes on each side. Place salmon on serving plate and serve with the salsa. The salsa dressing tastes amazing with the salmon and is a perfect match to a crisp Sav Blanc if feeling a little bit indulgent
