Breakfast

Healthy Breakfast Pancakes

Ingredients Method
Pancake batter 2 medium bananas 2 eggs
2 tbsp. almond meal or choc protein powder
½ tsp. vanilla essence( optional) 1 tbsp. coconut oil for cooking Topping 1 cup Greek yoghurt 1 cup fresh strawberries, sliced ½ cup fresh blueberries 1 tbsp. honey

Mash bananas until they have a creamy consistency. Add the eggs, almond meal( or protein powder) and vanilla essence and mix well to combine. Place ¼ tbsp. of the coconut oil in a small frying pan on low-medium heat. Once melted, add ¼ of the batter and make sure it is evenly spread across the pan. Cook for a few minutes until golden brown, lifting the sides with a spatula to check. Turn pancake over and cook until golden. Place 2 pancakes on a plate and spoon some Greek yoghurt on each of them. Top with blueberries, sliced strawberries and a drizzle of honey.

Banana Pancake

This is a great healthy breakfast or post workout meal. It’ s high in protein and contains good fats. The best part, it takes less than 10 minutes to make.
Ingredients Method
1 over ripe banana, mashed 1 dash of vanilla 1 dash of cinnamon 2 tsp. of chia seeds( optional) Coconut oil To serve( optional) Low fat Greek yoghurt
Strawberries, blueberries or raspberries( or all)
A dash of maple syrup

Whisk eggs and add vanilla and cinnamon to your taste. Add mashed banana and mix in. Add chia seeds if you like and mix. Heat coconut oil in small frypan. When hot, add banana mix. Once cooked at the bottom, pop under griller to cook the top. When cooked, remove and serve with whatever topping you like.
For a naughty version, you can treat yourself by throwing in a couple of chocolate chips.
