Healthy Live Muesli

Ingredients Method
1-2 heaped tbsp. oat flakes A handful of raisins or sultanas
1 apple or firm pear, grated or diced
2 tsp. fresh orange juice 1 small banana, finely chopped
2 tbsp. yoghurt( preferably sheep’ s or goat’ s milk yoghurt)
1 tsp. honey or stevia to taste
1 tbsp. chopped nuts or sunflower seeds
½ tsp. powdered cinnamon or ginger

Soak the grain flakes overnight in a little water or fruit juice to help break the starch down into sugars, along with the raisins or sultanas. In the morning, combine the soaked grain flakes and raisins with the apple / pear and banana, and add orange juice to prevent the fruit from browning and to aid digestion. Then top with yoghurt and add some fresh honey or a little stevia if desired. Sprinkle with your favourite chopped nuts( mine is toasted hazelnuts and pecans) or sunflower seeds and spices like cinnamon.
Did you know...?
The recipe of muesli was originally developed by the famous Swiss physician, Max Bircher-Benner. I find that most muesli packages contain way too much sugar and is heavy and hard to digest, and doesn’ t have enough of the good bits I really want. This recipe is made up of predominantly fresh fruit.
Zucchini Slice Frittata

1 brown onion, finely chopped 100g rindless smoked bacon 6 eggs 1 cup plain flour 1 tsp. of baking powder 2 tbsp. extra virgin olive oil
500g zucchini, trimmed, coarsely grated
1 cup kassem cheese, coarsely grated
2 tsp. fresh dill, chopped Dill sprigs to serve

Preheat oven to 180 degrees( 160 degrees fan forced). Spray 20cm ovenproof frying pan with oil. Cook onion and bacon in frying pan for 5 minutes or until crisp( cool slightly). Whisk eggs in a large bowl. Add flour, baking powder and oil, whisk until smooth. Add bacon mixture, zucchini, cheese and dill. Then, season. Pour into prepared pan. Bake for 50 minutes or until golden. Top with extra dill.
