200g strawberries 1 cup desiccated coconut ¾ rolled oats 3 tbsp. chia seeds 2 tbsp. coconut oil 2 tbsp. acai powder And extra coconut to roll in

Blend everything together until thoroughly combined. Roll it into small balls and through the coconut for presentation.
Chewy Weet-Bix Bars

Ingredients Method
¾ cup castor sugar 1 cup plain flour 1 tsp. baking powder ½ cup desiccated coconut 1 cup sultanas 5 Weet-Bix, crushed 1 egg, lightly beaten 125g butter, melted 1 tbsp. honey

Line 20cm x 30cm baking tray with baking paper. Combine sugar, sifted flour, baking powder, coconut, sultanas and Weet-Bix in large bowl. Stir in combined egg, butter and honey; mix well. Press mixture in prepared tray. Bake in the oven at 180 degrees for about 30 minutes or until lightly browned and cool in tray before cutting.
Muesli Power Bars

3 cups( 350g) natural bircher muesli or oats
½ cup( 50g) LSA –( ground linseed + almonds + sunflower seeds)
1 cup choice of dried apricots, dates or cranberries
3 organic eggs 1 tsp. vanilla extract ½ tsp. ground cinnamon
¼ cup( 60ml) olive oil or macadamia nut oil
¼ cup( 60ml) honey

Preheat oven to 160 degrees fan forced. Combine muesli, LSA, eggs, vanilla, cinnamon, olive oil and honey and choice of dried fruit in one large bowl until mixed through. Spoon into a baking tin lined with baking paper. Bake for 25 to 30 minutes until golden. Cool and then cut into 16 pieces.
