Chocolate, Peanut & Raspberry Protein Slice

Ingredients Method
½ cup rolled oats ¼ cup cocoa powder
2 scoops( 60g) chocolate or vanilla protein powder
⅓ cup firmly packed brown sugar ¼ cup peanut butter 2 eggs 120g apple puree ½cup reduced-fat milk
150g wedge firm ricotta cheese, crumbled
¼ cup dry roasted peanuts ½ cup frozen raspberries

Preheat oven to 180 degrees. Blend oats in a food processor until it achieves the consistency of flour, tip into a bowl and sift in cocoa, then stir in protein powder and sugar. Whisk together peanut butter, eggs, apple puree and milk until combined and then gently stir into dry ingredients. Spread mixture into a medium-size slice tin lined with baking paper. Crumble ricotta over the slice mixture and sprinkle with nuts and raspberries, pressing in slightly. Bake for 20-25 minutes or until only just cooked through. Cool in tin for 5 minutes before lifting onto a wire rack to cool completely. Cut into 16 bars and refrigerate until required.

1 cup raw almonds 400g medjool dates, seeded 2 cups natural cashews ⅔ cup Sanitarium Unsweetened Coconut Milk ½ cup desiccated coconut 1 tsp. vanilla ⅓ cup sesame seeds ⅓ cup black chia seeds

Place almond in food processor and process until roughly chopped. Remove and place in a medium bowl. Place dates, cashews, coconut milk, coconut and vanilla in a food process and process until mixture comes together. Transfer to bowl with almonds and mix well. Form mixture into balls and roll in combined sesame seeds and chia seeds. Place in fridge to become firm.

½ cup chopped almonds ½ cup chopped dates ¼ r cup rolled oats 1 tbsp. organic peanut butter 1 tbsp. organic raw cacao powder 1 tbsp. honey 1 tbsp. coconut oil

Add all the ingredients in a bowl and mix thoroughly until all the ingredients combine to create a sticky mixture( add more oats if it is too wet or more coconut oil if too dry). Empty the mixture into a tray or container, and push down with a spoon, then pop in the fridge. Leave overnight and cut into rectangular or square pieces and enjoy. Simple!
