Paleo Banana Bread

1 cup buckwheat flour 1 cup almond meal 4-5 tbsp. honey 2-3 mashed banana 1 / 3 cup grated coconut 4 tbsp. coconut oil 1 tbsp. cinnamon
1 / 3 cup mixed pumpkin and sunflower seeds

Preheat the oven to 180 º Combine the banana, eggs and buckwheat flour in a bowl then add almond meal, cinnamon and seeds( leaving a few to sprinkle over the finished product) along with baking powder, honey and salt. Mix well Add a little almond milk, if the mix is too dry Line a loaf baking tin with paper and / or grease with coconut oil. Sprinkle on the remaining seeds and coconut Pour in the batter and then cook in your preheated oven for 40-45 minutes, or until crispy, golden brown on top Remove from the oven and flip out onto a cooling rack. Allow to cool for at least 10 minutes, then slice and serve

4 cups wholemeal self-raising flour
2 tsp. baking powder 1 cup brown sugar 3 over-ripe bananas, peeled 150g( 5 oz.) butter, melted 375ml skim milk 2 tsp.( 10ml) vanilla essence

Preheat oven to 180 degrees. Line two loaf pans( 7.5 x 8.5 x15. cm) base measurement, with non-stick baking paper. Combine the oats, flour, baking powder and sugar in a large bowl. Make a well in the centre. Mash the bananas in a separate bowl until almost smooth. Add the banana, butter, milk and vanilla essence to the well in the dry ingredients. Mix until well combined and the mixture resembles a thick batter slightly thicker than a cake batter( you may need to add a little water). Divide the mixture between the lined pans. Bake for 40-45 minutes or until a skewer comes out clean when inserted in the middle. Leave in the tins on a wire rack to cool. Cut each loaf into 8 slices. Wrap any uneaten slices in plastic wrap and freeze until needed.
This is a healthy take on the usually not so healthy banana bread. The bread in this recipe can be quite heavy, so you won’ t need too much. I find it very filling and it is great toasted.
