Sweet Potato Rosti Stacks

3 small sweet potatoes 3 carrots 1 large zucchini 3 eggs ½ cup almond meal Seasoning
Turmeric, paprika, cajun seasoning, salt, pepper( to your liking)

Peel and grate root veggies and zucchini, in a large bowl mix in egg and almond meal to bind. Add seasoning to your liking. Use a spoon to form small pancake size stacks( balls) and fry at a medium to high heat in good quality olive oil. Press down the balls in the pan to flatten and cook until golden and crispy. Serve with salsa / sour cream.
Quinoa Fritters with Mango and Yoghurt

Serves 4 I do half the recipe for the two of us and it works well.

200g quinoa
2 large eggs plus 1 egg yolk, beaten
2 tbsp. flat leaf parsley, roughly chopped
2 tbsp. mint leaves, roughly chopped
2 spring onions, finely chopped
60g feta crumbled,( I use Lemnos lactose free feta)
3 cloves garlic, crushed 1 tsp. ground cumin
Finely grated zest of 1 lemon( or lime)
4 tbsp. flour
2 tbsp. light flavoured oil( I use grapeseed)
Thick Greek yoghurt( I use Black Swan Lactose free)
Small head of butter or cos lettuce, leaves separated

Place the quinoa and 375ml water in a small saucepan. Cover and bring to the boil over high heat, reduce the heat to low and simmer gently for 12 minutes or until the water has been absorbed and the quinoa is tender. Tip onto a large plate or tray and allow to cool( you will need 2 ½ cups cooked) Combine the quinoa, beaten egg and a pinch of sea salt in a bowl. Stir in the parsley, mint, spring onion, feta, garlic, cumin and zest. Add the flour and stir to combine. Form into patties using a heaped tablespoon of the mixture( or make bigger and adjust cooking time). Heat oil in a large frying pan over medium heat. Add 6 patties and cook for 8 minutes each side or until golden, turning carefully. Remove and repeat with remaining patties. Serve with the lettuce and yoghurt and squeeze of lime. I like to serve with a fresh juicy fruit or vegetable such as; peach, nectarine, mango, orange or tomato.
