A Greek Gastronomical Guide: Athenian Cheesecake

Ingredients:

2 tbsp Almond Oil

2 lb Ricotta Cheese

5 Eggs

1 cup AP Flour

1 cup Honey

Toasted Walnuts (optional)

I consulted Cooking in Ancient Civilizations by Cathy Kaufman, who uses recipes referenced by Athenaeus. The recipe, including any changes I made, follows.

Instructions:

Grease a 10-inch springform pan with almond oil and preheat oven to 350℉.

Whisk ricotta, slowly mix in eggs until just incorporated and smooth, then fold in flour and a pinch of salt.
