Here’s how you can add some Asian-style flair to your fare,
when entertaining this festive season.
CHICKEN BANH-MI ROLLERS
Makes 12
What you’ll need
¼ cup rice vinegar
2 teaspoons lime juice
1 teaspoon soy sauce
1 teaspoon fish sauce
½ teaspoon pepper
1 teaspoon sugar
2 large carrots, julienned (thinly
sliced)
1 Lebanese cucumber
12 roller buns of your choice
Mayonnaise
½ cup fresh coriander
1½ cups cooked roast chicken,
cooled and shredded
1 to 2 jalapenos, thinly sliced
Soy sauce, to serve
How to make it
Whisk together the vinegar, lime
juice, soy sauce, fish sauce, pepper
and sugar in a bowl. Toss through
the julienned carrot and allow to
marinate for at least 30 minutes.
Using vegetable peeler or a
mandolin, thinly peel the cucumber.
Split a roller bun in half
lengthways. Spread the insides
with mayonnaise then add
coriander, cucumber, carrot,
chicken, a few slices of jalapenos
and a sprinkle of soy sauce.
