Rum Marinated Caribbean Grilled Chicken

This is a great Caribbean inspired chicken marinade that ’ s very popular on our Caribbean buffets here at the club . The fresh ginger and garlic give this grilled chicken a wonderful flavor profile . Happy grilling and enjoy !
Ingredients ( Serves 4 )
• 12 pieces bone in skin on chicken breasts , thighs , and legs
• 4 Tablespoons Myer ’ s Dark Rum
• ½ Cup Fresh Lime Juice
• ½ Cup Fresh Lemon Juice
• 4 Tablespoons Olive Oil
• 4 Tablespoons Soy Sauce
• 2 Tablespoons Hot Sauce
• 1 Cup Light Brown Sugar
• ½ Cup Minced Fresh Garlic
• ½ Cup Minced Fresh Ginger
• 1 Tablespoon Fresh Thyme
• 1 Teaspoon Crushed Red Pepper
Directions
Whisk all ingredients in a bowl and pour over chicken . Cover and marinate chicken in refrigerator for 24 hours . Grill chicken until the internal temperature is 165 degrees .
