How clean
All varieties of mushrooms "injured" easily and should be treated with
care.
To clean them, wipe them with a damp cloth or wash with cool water
(do not soak, because they absorb water and become soft and tasteless).
Cut and throw away the bottom of the "stem", which usually is hard and
covered with soil
