With my gourmet partner in crime , Johnny Ong ( fellow Publicity & Engagement Committee member ), we visited the much talked-about Sky Bistro for food tasting during one pleasant evening . We were greeted by our affable host , Esmund Tan ( one of the partners of Sky Bistro ) as he introduced his signature dishes for our review . We started with cold beers , special cocktails ( more suitable for the ladies ), starters , main dishes and rightfully desserts but were supplanted by more beers instead . Our intention was to leave once we sampled the food , but we overstayed our welcome by leaving at around 9.00pm . Trust you will agree that a 5-hour dinner was not too long for a fact-finding mission given the captivating ambience .

The panoramic view from the fifth level is nothing short of spectacular ; overlooking the runway of Changi Airport , one can catch sight of the taking off and landing of aircraft . Levels 2 , 3 and 4 are golf driving ranges and if you are lucky to secure a table by the side of the bistro , you could watch golf balls flying like falling meteors – simply therapeutic . Crowds comprising yuppies , budding couples and golfers start building up from 7.30pm and Sky Bistro became livelier as more Beer Towers streamed in .

The restaurant is helmed by Chef Jaffrey Wong , a veteran in the food industry who has worked in various countries before settling in Sky Bistro . He strongly believes that quality ingredients can bring out the unique taste of food , therefore he only works with designated suppliers
