Broccoli Cheddar Cheese Soup
This is a quick easy recipe for broccoli cheese soup that the ladies at Sun N ’ Lake usually enjoy on Wednesday Golf / Card day .
Ingredients ( Serves 12 )
• ½ Cup Butter
• 1 Large Yellow Onion Diced
• 2 Lbs . Fresh Broccoli Small Diced or Food Processed
• 16 oz . Chicken Stock
• 1 Lb . Shredded Sharp Cheddar Cheese
• 2 Cups Heavy Cream
• 2 / 3 Cup Cornstarch
• 1 Cup Water
Directions
In a stock pot melt butter over medium heat . Add onions and cook until translucent . Add the chicken stock and bring to a boil . Whisk the cornstarch and water together then add to the chicken stock until slightly thickened . Add the fresh broccoli and simmer for 10 minutes . Remove from the heat and slowly whisk in the cheddar cheese until smooth . Whisk in the heavy cream .
Ready to serve .
