Summer superfoods salad
Toss those extra pounds with a sweet, tart and savory
superfoods salad treat perfect for the summer months.
Ingredients
2 Granny Smith apples, peeled and julienned
1 cup celery root, peeled and julienned
½ cup fresh blueberries
1 three-ounce boneless skinless chicken breast, poached and
cubed
½ cup fat-free plain yogurt
1 lime, juiced
Freshly ground pepper
½ cup walnuts, toasted
Radicchio, for serving
Directions
• In a large bowl, combine apples and celery root, chicken
breast and blueberries.
• In a separate bowl, stir together yogurt and lime juice to
make a dressing.
• Season to taste with freshly ground pepper.
• Pour the dressing over the salad and toss to combine.
• To serve, place salad in radicchio leaves to make a cup.
• Top with toasted walnuts just before serving.
