Hot Chocolate Ingredients 1 vanilla pod, split and seeds scraped out (optional) 1 cinnamon stick 1¾ pints full fat milk 5½oz good quality chocolate, chopped into small pieces Brown sugar, to taste Freshly grated nutmeg, for dusting (optional) Whipped cream Apple Crumble By Fatima Chohan Ingredients Topping 4 apples. Wash, peel, core 6oz cold butter and chop into small pieces. 5oz plain flour 1 tsp cinnamon 1oz oats 1 tbsp sugar, any kind but 3oz sugar preferably brown Juice of ½ squeezed orange Method Heat the vanilla pod and seeds, the cinnamon stick and milk in a saucepan until boiling. Remove the pan from the heat and add the chocolate pieces, stirring until the chocolate melts. Whisk the hot chocolate until frothy on top and add sugar, to taste. Serve with a dusting of nutmeg and whipped cream on top. Serve with marshmallows. Method Turn the oven on to 200C/180C fan/ gas 6. Peel the apples, quarter them, cut out the cores, then chop. Tip the apple into a bowl with the cinnamon,1 tbsp sugar and the orange juice. Butter a baking dish and tip the apple mixture into it and pat it down. Chop the butter into small pieces. Put it in a bowl with the flour. Use your fingers to pinch and rub the butter into the flour so look like breadcrumbs. Stir in the oats and the sugar into the flour mixture. Sprinkle it on top of the apple in the baking dish. Bake it in the oven for 40 mins or until the top looks nice and crispy. Serve hot with ice cream, custard or cream. 99 NISBAH
