Coconut French toast with Nutmeg syrup
INGREDIENTS 2 large eggs
1 cup coconut milk 1 tsp . coconut extract or
¼ tsp . vanilla extract 1 / 2 tsp . cinnamon grounded
¼ tsp . nutmeg grounded ¼ cup white sugar
1 / 8 tsp . salt 1 cup shredded coconut flakes 6 Slices of French bread cut into
½ inch slices Topping : Morne Delice Nutmeg Syrup
METHOD
• In a mixing bowl , whisk together the eggs , coconut milk , sugar , cinnamon , nutmeg , coconut extract , vanilla extract , and salt .
• Dip both sides of each slice of bread into the egg mixture .
• Place the shredded coconut on a plate . Dip both sides of the coated bread into the shredded coconut .
• Heat a large non-stick frying pan or a griddle to medium heat . Cook the slices of bread until golden brown on both sides .
• Serve immediately or keep French toast warm in a 250 F oven .
• Serve with Morne Delice Nutmeg Syrup
