Sauteed smoked herring
INGREDIENTS 8oz Smoked herring - fillets
1 clove of garlic 1 pimento pepper julienne
2 tbsps . coconut oil
1 / 2 cup onions 1tbsp thyme , fresh 1 / 2 cup tomatoes 1 / 2 cup cabbage
2green onions sliced thinly ( white and green parts )
INSTRUCTIONS
• For 10 minutes , bring smoked herring to a boil . This will get rid of any excess salt .
• In a bowl , debone and separate the fleshy bits of the smoked herring . Dispose the skin and bones from the fish .
• Pull apart the fleshy bits into fine thread-like pieces which can be done by hand or pulsed in a food processor .
• In a saucepan , heat oil for 30 seconds before adding half the onions , garlic , and pepper and sautéing until aromatic . Mix well and incorporate the smoked herring into the sautéed vegetables .
• Add remaining ingredients and stir occasionally .
• Remove from the heat and add the remaining onions .
• Serve with your choice of coconut bake , fry bake , or roasted breadfruit ; as preferred .
