CHOOSING YOUR SAKE WARE AUTUMN KOHIKI, HAKEME OR LACQUERED WOODEN WARE Kohiki is sake ware which is completey covered in white clay, with a powdery appearance in places. Hakeme, on the other hand, is sake ware with brush marks on the surface. These are both light brown or beige in colour and have a very autumnal feel to the touch. These materials are suitable for lightly chilled or room temperature sake, or even warm sake when it is slightly colder in mid to late autumn. Lacquered wooden wares are also suitable in autumn, with warm darkish red, brown or black colours., These are soft and comforting to hold in the hands and to touch on your lips. WINTER BIZEN, SHIGARAKI OR OTHER EARTHENWARE Winter is the season for warm sake. Earthenware is particularly suitable for warm sake for functionality, with a suitable look and feel. These pottery vessels are very warm and comforting to touch and also tend to make the taste of sake much rounder. They also keep sake warm longer in comparison to porcelain or glassware.
