Throughout time food has been an identifier for just about every culture that has ever existed. Today we feature a Peruvian favorite, called Causa Limena. One of our interns, Sattia Maria Chozo, is from Peru and hand selected this recipe. So take it from the pro, this is going to be good! Ingredients 2 pieces chicken breast 2 1/2 lbs potatoes 1/3 cup yellow chili paste 1/2 cup vegetable oil 1 lb mixed vegetables 3 lemons, juiced 1/4 cup salt 1 cup mayonnaise 4 eggs boiled, cut into pieces black olives 01 | VOICES | MCA.UTAH.GOV Directions 1. Boil the chicken and set aside when cooked. 2. In another pot boil the potatoes in salted water. When cooked, peel and mash the potatoes. 3. Mix the potatoes with the chili paste,vegetable oil, and some of the mixed vegetables, lemon juice and a pinch of salt. 4. Chop the chicken into small pieces and mix with mayonnaise and the remaining mixed vegetables. 5. In a dish place a layer of the mashed potato mix. Cover with layer of the chicken mix. Repeat this process. 6. Decorate with eggs and black olives. Serve cold.
