One pan soft shell tacos with BBQ chicken

Need a quick healthy, juicy lunch that won’ t leave you wanting? This recipe is quick and easy to make and is full of good calories. So get cooking!
Recipe: Ingredients:
• 90g red onion, sliced
• 110g peppers, sliced
• 320g chicken breasts, butterflied and sliced
• 1 tsp each garlic flakes, dried chilli flakes, chicken spice
• 1 tbsp olive oil
• 30g low fat Greek yoghurt
• 15g lite mayo
• 1 medium avocado, mashed
• 1 / 2 lemon, juice only
• 30g bbq sauce
• 4 mini wraps( 30g each)
• salt and pepper to taste
• 1 tbsp parsley, chopped

Directions: 1. Preheat your oven to 180 degrees. 2. Pop your onions, peppers, chicken breasts, garlic flakes, chilli flakes and olive oil onto a baking tray.. Mix well before cooking in the oven for 20 minutes. 3. In the meantime, combine your low fat yoghurt and lite mayo in a ramekin, mix well and set aside. 4. Slice your avocado and add to a bowl, season to taste with salt and pepper and add your lemon juice. Mash using a fork and mix until well combined. 5. Remove your tray from the oven, top the contents with your bbq sauce, then mix well. 6. Heat up your wraps on a gas burner and give them a nice char. ⁠ 7. On each wrap add your chicken with fajita veg. Top it with your guacamole and your yoghurt mixture. 8. Add your chopped parsley, season to taste, and enjoy.

Healthier chocolate crunch bars

Recipe:
This makes about 4 servings:
• 100 g 80 % dark chocolate
• 1 / 4 cup unsweetened peanut butter or any other nut butter( 60 ml)
• 1 tablespoon maple syrup or honey
• 4 crushed plain rice cakes
• 1 / 3 cup chopped nuts of choice— I used hazelnuts( 80 ml)
• Optional: flaky sea salt
Method: 1. Melt the chocolate and mix in the peanut butter and syrup together. 2. Add the rice cakes and chopped nuts and stir until combined. 3. Press the mixture into a container lined with parchment paper, add sea salt flakes on top if you like, and set in the freezer for one hour. Cut into bars and enjoy! 4. Store in the fridge or freezer.
