In a large sauté pan, heat 1 tbsp
olive oil over medium heat for
1 minute.
Add diced squid and sauté
about 10 minutes.
Remove squid with slotted
spoon and set aside.

In the same pan and oil (add an extra 1 tbsp of olive oil if
necessary), sauté onions over medium heat until translucent,
about 7 minutes.
Add grated tomato and let cook until thickened, about
5-7 minutes.
