Prepare ingredients:
· Lemon: Grate 1/4 teaspoon per person of lemon zest using
a zest grater or the smallest setting on a cheese grater. For an
extra-lemony custard, use up to 1/2 teaspoon per person.
Set aside.
· Eggs: Crack eggs, reserve yolks, and discard whites. Place in
large mixing bowl.
· Sugar: Add 3/4 of the provided sugar into mixing bowl with
the eggs. Reserve the remaining sugar.
Combine ingredients:
In a pot, beat together the egg yolks and 3/4 parts of the sugar
until thoroughly blended and the mixture turn frothy.
