Pumpkin, Carrot, & Coconut Biscuits
Healthy and delicious!
Ingredients:
• 1 3 / 4 Cup Almond or All Purpose Blend Flour
• 1 / 2 Cup Canned Pumpkin Puree
• 2 Tbsp. Peanut or Almond Butter
• 2 Eggs
• 1 Cup Grated Carrots
• 1 Cup Shredded Dried Coconut
Instructions:
1) Combine flour, puree, eggs, carrots, and coconuts in a large bowl and blend well.
2) Roll dough to 1 / 4 to 3 / 8 inch thick.
3) Shape dough with cookie cutters and place on lightly oiled cookie tray.
4) Bake at 350 degrees F for 30- 35 minutes or until light brown.
