“ We are a small cheese factory here on Hidcote Farm, and I opted for making cheese rather than just farming cattle,” says Leigh in the boardroom in a brand-new office space on the farm.“ We opened the facility in 2022 after we set up the new equipment according to the needs of our production plans. We started fairly small, processing probably 20 000 l of milk per day. This quickly increased to 36 000 l, and now we have settled on more or less 30 000 l per day, or 3,3 t of cheese, depending on the season.”
From Monday to Friday during peak times, they produce about 3,9 t / day for seven days per week. This totals about 115 t per month of a mix of cheddar and Gouda. About one million litres of milk per month are processed during this time.
4. Hygiene is of the highest priority and equipment is cleaned at regular intervals.
