Step 5
Using a ganache scraper , hold it perpendicular to the cake , then at a 45 ° angle . This ensures the buttercream is being smoothed and not just taken straight off .

Once the cake has been refrigerated for 5-10 minutes , apply the second coat of buttercream , darkest colour first . Add more white buttercream as you work your way up the cake , to create an ombre effect .
Step 7
Scoop the lightest colour on top of the cake . Using the pallet knife , smooth it out until it starts to ‘ sit ’ over the cake .

Use the ganache scraper to smooth the sides of the buttercream . After a few rotations , scrape of collected icing on the scraper and repeat until desired smoothness . Refrigerate until icing is hard .

Place fondant
snowflakes around
the sides of the
cake .
Scoop white chocolate ganache over the cake and let it run down naturally . Create varied lengths of drips .
Place the leftover buttercream into a piping bag with a piping tip . Pipe swirls on the top of the cake .
Place your largest toppings onto the cake first .
