12 Food Safety Hazards Raw and rare cooked beef • Bacteria do not occur within the flesh of animals. • Bacteria come from the gut and get onto the meat when it is butchered using contaminated equipment and surfaces • Cooking the meat kills the bacteria on the outside surfaces. Using a clean knife to cut meat keeps it safe even if it is raw in the middle. • Burgers are different and need thorough cooking. Raw eggs • Eggs can become contaminated with salmonella from two places, chicken faeces on the shell and from the oviduct within the chicken when eggs are formed. • ‘Lion’ eggs are safer as the hens are vaccinated but should not be eaten raw Raw fish/shellfish • Any fish that is to be eaten raw must come from clean water or depuration sources. They are filter eaters and filter huge volumes of water. Bacteria will concentrate in filters
