Wimbledon time calls for a strawberry sweet treat
AS we come into July and August there is lots of lovely fresh produce in season perfect for some light and tasty summer recipes .
Many berries including blackberries make their first appearance , along with melon and peaches . Sweetcorn , broccoli , beetroot , watercress and courgettes are also particularly good and seafood lovers can enjoy fresh , seasonal scallops .
However with the British institution that is Wimbledon taking place it would be rude not to include the scrmptious strawberry in there somewhere so why not indulge in this tasty sweet and easy treat that is Eaton Mess .
Eaton Mess
Ingredients :
500g / 1lb 2oz strawberries , hulls removed 400ml / 14fl oz double cream 4 x 7.5cm / 3in ready-made meringue nests , crushed 1 table spoon of ginger cordial Sprigs of fresh mint , to garnish
Serves : 4 Preparation time :
10 minutes
Method :
1 . Purée half the strawberries in a blender . Chop the remaining strawberries , reserving four for decoration . 2 . Whip the double cream until stiff peaks form , then fold in the strawberry purée and crushed meringue . Fold in the chopped strawberries and ginger cordial . 3 . Spoon equal amounts of the mixture into four cold wine glasses . Serve garnished with the remaining strawberries and a sprig of mint .
