Drying, is therefore, a mass transfer process which removes water or any other solvent by way of evaporation from a solid, semi-solid or liquid. Some of the methods of drying are:  Application of hot air - This process reduces air relative humidity and thereby increases the driving force of drying.  Indirect or contact drying – This is done with the help of drum drying and vacuum drying.  Freeze drying - It is a drying method where the solvent is frozen before drying and sublimed  Supercritical drying – This involves steam drying of products containing water. This process is considered because here the water is boiled off and joined with the drying medium.  Natural air drying – This process uses unheated forced air.
