Tsampa is a hearty,
nutty-tasting flour made from roasted barley.
* first we wash the barley thoroughly with water, to spread it out to dry on a large flat surface, and then we heat the sand on high on the stove, to pour some barley on top of the heated sand
and roast the barley, shaking it together with the sand in the pan. we separate the sand and roasted barley. to grind the roasted barley to make barley flour. it call tsampa
