Then Xena put the eggplant cubes in the pot and began stir frying them. After that, she took the eggplant out of the pot, and fried the minced meat with garlic and added the eggplant back in the pot. Next, she chopped some hot pepper to enhance the taste.
Add some light soy bean sauce(生抽) and salt, and then stir fry for about five minutes. After that, Xena put some water in the pot and braised the eggplant until its color turned brown, which signaled that the dish was almost ready!
And here it is! Eggplant with minced meat! It tastes really good and reminds me of home.
Oops! No more dish!
The preparation work took twenty minutes, and the actual cooking took twenty minutes, but it only took the six of us less than one minute to finish the whole dish!
