Festive Fudge Low Sugar Ginger Slices Recipe from Stacey Dee’s Kitchen Whether it’s gingerbread men or Ger man Lebkuchen, ginger is an essential flavour of Christmas. These simple ginger slices are virtually sugar free and are deliciously soft and gooe y. Pop them in a tin and giv e them as a thoughtful homemade gift…or keep them all to yourself ! Makes 9 slices. What you need • 75g unsalted butter • 130g xylitol sugar alternative • 4 large eggs • 1 tsp ground ginger • 1 1/2 tsp mixed spice • 170g ground almonds (processed to make finer if not already extra fine) • 1 1/2 tsp of baking powder • 1 tsp vanilla extract What you do 1. Preheat oven to 180oC or 160oC fan. 2. Line an 8 inch square tin/brownie tin. 3. Melt the butter in a bowl in the microwave and add the xylitol and whisk to combine. 4. Spoon into a stand mixer with a whisk attachment. Add the eggs one at a time, while whisking slowly. 5. Add the almonds, baking powder, spices and vanilla, and mix until smooth. Use a spa tula to ensur e all the mixture has been taken down from the sides of the bowl. 6. Pour into the lined cake tin and bake for 20 mins. 7. Carefully cover with f oil and contin ue to bake f or 10 mins. What you need What you do • One can of condensed milk • 12oz dark chocolate chips • 64g chopped walnuts • 64g small marshmallows • Smarties (you choose how many) 1. Line an 8 x 8 inch square pan with foil. 2. In a microwave-safe bowl combine the condensed milk and chocolate chips. Microwave on high for 1 1/2 minutes, or until c hocolate is melted. Stir until smooth. 3. Stir in c hopped walnuts, marshmallows and Smarties. Pour into prepared pan and spread evenly. 4. Cover and refrigerate for 2 hours, or until firm. 40 8. Remove from the oven and allow to cool in the tin for 20 mins and then remove and leave to cool on a wire rack. 9. Slice into 9 pieces.
