Worry not, you don’t need to have artistic flair, or be technically skilled, all y ou need is some time , patience and a whole lot of love, in order to create a truly special gift for your loved ones this Christmas. Chestnut Truffles What you need What you do • 100ml double cream • 225g dark chocolate (finely chopped) • 2tbsp chestnut puree • 4tbsp cocoa nibs (finely chopped) 1. Pour the cream into a saucepan and heat until just before it starts to simmer. 2. Put the chocolate into a bowl and slowly pour the cream over it, stirring until it melts. Keep stirring until the mixture is glossy and smooth. Remove from the heat and stir in the chestnut puree. 3. Allow the mixture to cool and then chill until it is set. 4. Once set, roll the truffle mixture into small balls (about a teaspoon’s worth each time). Roll in the chopped cocoa nibs and chill once more. 39
