Greeted with a beer from on-site brewers, Boutilliers, guests were guided through a range of cuts before getting hands on with a forequarter of Macknade’s pasture-fed beef. The natural ice cream is loving handmade in small batches in Bonnington, Ashford, using natural and fresh local ingredients. Available in a variety of flavours including Stem Ginger and Marmalade for which judges commented: “Soft and creamy with an awakening warmth from the ginger and the zingy marmalade. This luxurious ice cream is an unusual flavour combination, but an unbeatable one.” L O S T S HE EP CO F FEE O W N E R F O U NDER , S T U A RT W IL SON All Macknade beef is sourced only from PFLA (Pasture Fed Livestock Association) certified farms in the South East, meaning that the animals have been fed a 100% natural diet of grasses, wildflowers & herbs through their entire lives. The demonstration was followed by a sit-down meal in the butchery where ex-Michelin chef and current Macknade head butcher, Simon Maynard, prepared beef bourguignon and answered questions about the Macknade butchery ethos. insideKENT’s Karlene Gannon said: “The evening was extremely informative, not only did I learn about butchery but also about animal welfare and how to use the whole animal. It was interesting to find out about forgotten cuts that when prepared correctly are incredibly tasty. The event is one of many intimate and exclusive demonstration sessions that will be run at the Faversham site and are bookable online. L O ST SH EEP CO F F EE P LANS T O EXP A ND IN 2020 Kent’s own specialty coffee roaster, Lost Sheep Coffee, marks record sales of its new plastic free Nespresso 100% Compostable Coffee capsules retail arm with a huge 322% increase in turnover. This is set to increase further as the capsule range will be available in selected Morrisons stores this winter with a nationwide rollout expected by early 2020. The micro-roastery and coffee shop brand launched the new Nespresso compostable coffee capsules in February 2019 and completely sold out within eight weeks of launch. Says Lost Sheep Coffee owner founder, Stuart Wilson: “We are keeping up with the current demand, but to ensure we meet the future demand we are rolling out the national launch in two stages. The appetite for our plastic free 100% compostable capsules has been unprecedented, with customers all over the country and beyond buying them. To ensure we can meet the growing demands we are now moving to larger premises, this move will make us the largest speciality coffee roastery in kent It is so satisfying for me to know that thousands of capsules have not gone into landfill and even if they did end up in landfill, they will still break down. It’s great to think that all of the capsules we’ve ever sold (if they have been used) would by now have now completely composted to nothing.” The company is now planning to expand the roastery to new premises in Whitstable, allowing them to double their production, increase storage capabilities and create multiple new jobs. 109
